Florida Pompano are regarded by many as one of the best eating fish in our state waters. They are highly sought after by land based anglers and are one of the priciest fish you will find in any seafood market. They are often found in the $20/lb range and up and for good reason!

Snook (Family Centropomidae)

Snook are a highly prized game fish due to it’s aggressive fighting ability and delicious white flesh. Snook are excellent eating and fun to catch but do have strict catch limits and closures. Snook can grow as large as 44 pounds and feed on small fish, shrimp and an occasional crab.

Grouper. There are more than 400 different species of grouper in the sea, but the most popular Florida favorites are Black Grouper, Red Grouper and Gag. This type of fish has a very mild flavor (somewhere in between seabass and halibut) with a light, sweet taste and large, chunky flakes, almost like lobster or crab.

Because the supply of domestic grouper is limited and the demand great, it is typically a more expensive fish to purchase than others. Wholesale fillet values are generally between $11 to $13 per pound, which means retail value, what consumers pay, is typically even higher.

The most expensive fish in the world in the Platinum Arowana. People have been known to pay thousands of dollars to purchase one of these beautiful fish that is known not only for its beauty but also its brains. Besides being the most expensive, this fish is also the rarest.

Grouper. A lean fish in the sea bass family, typically found around coral reefs. Flavor/Texture: This white-fleshed fish is mild and sweet, with a firm texture and a large flake. Substitutes: Black sea bass is the most likely substitute, although you could also use snapper, mahi mahi or shark.

Tilapia. You may have heard that cold saltwater fish, like cod, are top sources of omega-3 fatty acids, the polyunsaturated fats that help raise “good” HDL cholesterol levels. But because fresh-water tilapia contains more total fat than cod, it has nearly as many omega-3s.

Cod is both a nutritious and flavorful fish loaded with lean protein, vitamins, and minerals. Although lower in omega-3s than fatty fish, cod can still be part of a healthy diet. Cod contains less mercury than some seafood, including popular fish like tuna, and can be prepared in multiple ways.

This toxic chemical has been known to cause inflammation and weaken the immune system. It can also increase the risk for allergies, asthma, obesity and metabolic disorders. Another toxic chemical in tilapia is dioxin, which has been linked to the onset and progression of cancer and other serious health problems.

The bad news for tilapia is that it only contains 240 mg of omega-3 fatty acids per serving — ten times less omega-3 than wild salmon (3). Some people even believe omega-6 fatty acids can be harmful and increase inflammation if eaten in excess ( 8 ).

Tilapia in the wild feed on algae, but on farms they are reared on corn or soybean meal. However, when no other feed is provided, they will eat “poop.” There have been instances where fish farms in Asia were found to be feeding poultry, sheep or hog manure to tilapia.
