How to freeze butternut squash

Do I need to blanch butternut squash before freezing?

The word “squash” comes from the Narragansett word that means “to eat raw or green.” You certainly won’t be eating your squash raw or green, and you must cook it even before you freeze it to make sure that the squash retains its color and texture once it is thawed. The process of cooking squash is called blanching.

How do you prepare butternut squash for freezing?

Peel and cut the squash into one-inch chunks. Spread the pieces in a single layer on a parchment or wax paper-lined baking sheet and place in the freezer. When completely frozen, transfer the squash to a freezer-safe bag or container with about 1/2 inch headspace to allow for food expansion.

What is the best way to freeze squash?

Allow your squash to cool; then, drop it into a freezer bag, and pop it in the freezer. If you prefer, you can also flash freeze your squash on a cookie sheet before bagging it. This will ensure that each piece freezes individually, so you can easily reach into a bag and grab just what you need for a recipe.

Can you freeze squash without cooking it?

Yes, you can certainly freeze it without blanching. The purpose of blanching prior to freezing is to stop the enzymes that degrade the flavor, it’s not for safety. As long as you eat the squash within 4 to 6 months, the flavor should be ok.

Frozen squash can be taken out of the freezer later when you are ready to cook them. If you plan on making fried squash from the freezer, the technique is the same, except you can flour them before freezing if you prefer.

Extreme cold, heat, drought or too much irrigation, or even a lack of plant nutrients, excessive pest infestation or disease can all create these elevated levels of cucurbitacin in the squash resulting in a bitter flavor.
