How to become a sous chef

How long does it takes to complete a higher education for sous chef? It can take a sous chef one to two years to obtain an associate culinary arts degree while a bachelor’s degree will take four years.

The sous chef must be quick-thinking, adaptable and calm under pressure. They’re often responsible for making changes on the fly when certain supplies – or staff – don’t arrive in time for service. They are the link between the lead chef and the entire team. It’s a vital role in any kitchen environment.

On-the-job experience is essential for any kitchen worker who wants to climb the ladder, so sous chef is generally not considered to be an entry-level position.

A college degree is not mandatory for a sous chef, but you should have a high school diploma or General Education Development (GED) certificate. You can obtain a two-year associate degree or four-year bachelor’s degree in culinary arts from many colleges, universities and professional institutions.

They are instead in charge of menu development throughout the chain of restaurants and sourcing the ingredients for the menu. This is a management role for a Chef who is well seasoned in both food science and leadership. When the Head Chef is not in the building, the Sous Chef is in charge.

Head Chef (aka Executive Chef, Chef de Cuisine) -​

Chef de Cuisine is the traditional French term, and although it’s slightly more common in European kitchens, head chef is the title that’s used most prevalently around the world.

Deputy Chef (Sous Chef)

The deputy chef, otherwise known as the sous chef, remains second-in-command in the kitchen. Depending on the restaurant and its management, it is possible to have more than one sous chef.

Simply said, the height of the hat signifies the rank in the kitchen – just like papal hats represent class and standing. This is why the chef, since it’s the highest ranking in any kitchen, wears the tallest one.

Pleated chef’s hats have a two-fold purpose. In the early days of the toque blanche, pleats would often represent how many recipes a chef had mastered. So, a chef with 100 pleats may know 100 different ways to boil an egg or prepare a chicken.

How valiant! Another good one: The hundred folds in a chef’s toque (that tall, pleated hat) represent the hundred ways to cook an egg. The first person to turn to in any quest regarding esoteric French cooking wisdom is Auguste Escoffier, arguably the most famous figure in the history of French cuisine.

It became a statement to how serious you were as a cook or a chef. The more tattoos you had and the more the ink displayed food-related images, the more passion you had for your craft, in many people’s eyes.

In the USA you can have a beard but if it’s long enough you have to wear a beard net. The law is unclear as to how long is too long though. One corporate entity (I think it was Red Lobster) arbitrarily defined anything beyond 1/8th of an inch. Other food producers followed suit.

But for Knives and Ink, they zeroed in on cooks and chefs, a breed well known for sporting body art. For a very long time, being a chef is one of the very few industries where you could just be covered head to toe, tattoos on your face, it didn’t matter as long as what you were making is good.
